Wrap roast in cheese cloth five to seven days before cooking. This is a rough dry age and makes the meat beefier.
Pull roast out 1 - 2 hours before cooking to come up to room temperature. Set oven to 450. If desired create a paste of olive oil, salt, smoked paprika, garlic, and herbs. Cover meat with paste. If no paste is used cover with oil and salt and pepper
Roast bone side down for 20 minutes. Then turn down the oven to 350, and cooke until themometer reads 127.
